- 1 1/2 teaspoons baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup unsalted butter
- 1 cup granulated sugar
- 1 cup brown sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- 1 cup grated carrots
- 8 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1/2 cup walnuts or pecans, chopped
- 1/2 cup brown sugar (for topping)
- 1/3 cup all-purpose flour (for topping)
- 1 teaspoon ground cinnamon (for topping)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
- Whisk together the flour, baking powder, baking soda, salt, and ground cinnamon in a mixing bowl.
- Cream together the unsalted butter, granulated sugar, and brown sugar until fluffy. Add the eggs one at a time, then blend in the vanilla extract.
- Add gradually the dry ingredients to the butter-sugar-egg mixture, mixing just until combined. Fold in the grated carrots.
- Beat the softened cream cheese with the powdered sugar until smooth.
- Spread half of the cake batter into the prepared baking pan. Dollop the cream cheese mixture over this layer, then gently spread the remaining cake batter to cover it.
- Combine the topping ingredients in a small bowl and sprinkle over the cake batter.
- Bake for 40-45 minutes and check for doneness with a toothpick.
- Allow the cake to cool in the pan before serving.

Make ahead: Bake a day before to enhance flavors. Can be made in an air fryer with adjusted cooking time.
