Ingredients

  • 1 1/2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup unsalted butter
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 8 oz cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup walnuts or pecans, chopped
  • 1/2 cup brown sugar (for topping)
  • 1/3 cup all-purpose flour (for topping)
  • 1 teaspoon ground cinnamon (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan.
  2. Whisk together the flour, baking powder, baking soda, salt, and ground cinnamon in a mixing bowl.
  3. Cream together the unsalted butter, granulated sugar, and brown sugar until fluffy. Add the eggs one at a time, then blend in the vanilla extract.
  4. Add gradually the dry ingredients to the butter-sugar-egg mixture, mixing just until combined. Fold in the grated carrots.
  5. Beat the softened cream cheese with the powdered sugar until smooth.
  6. Spread half of the cake batter into the prepared baking pan. Dollop the cream cheese mixture over this layer, then gently spread the remaining cake batter to cover it.
  7. Combine the topping ingredients in a small bowl and sprinkle over the cake batter.
  8. Bake for 40-45 minutes and check for doneness with a toothpick.
  9. Allow the cake to cool in the pan before serving.

Notes

Make ahead: Bake a day before to enhance flavors. Can be made in an air fryer with adjusted cooking time.
