- 4 chicken pieces (thighs and drumsticks preferred)
- 2 cups cherry tomatoes
- 1 cup Kalamata or Niçoise olives
- 2 shallots, finely chopped
- 4 cloves garlic, minced
- 1 cup dry white wine
- 2 tablespoons olive oil
- 1 tablespoon herbs de Provence
- Salt and pepper to taste
Instructions
- Heat olive oil in a large skillet over medium heat until shimmering.
- Season chicken pieces with salt and pepper, and brown them in the skillet for 5-7 minutes on each side.
- Remove the chicken from the skillet and set aside to rest.
- Add shallots and garlic to the skillet and sauté for 2-3 minutes until fragrant.
- Stir in cherry tomatoes and olives, cooking for a couple of minutes until tomatoes soften.
- Pour in white wine and add herbs de Provence, stirring to combine.
- Return the chicken to the skillet, cover, and reduce heat to low; let it simmer for 30-40 minutes until the chicken is tender.
- Serve hot, drizzling the rich sauce over each piece of chicken.
Notes
For best results, allow the dish to develop flavors by preparing it a few hours in advance or the night before. Serve with crusty bread to soak up the sauce.
