Ingredients

  • 2 cups all-purpose flour
  • 1 1/2 cups granulated sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 2 cups fresh strawberries, chopped
  • For the icing:
  • 1 cup butter, softened
  • 4 cups powdered sugar
  • 1/4 cup fresh strawberries, pureed

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. Cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  4. Whisk together the flour, baking powder, and salt in another bowl. Gradually add this to the creamed mixture, alternating with milk.
  5. Fold in the chopped strawberries gently to preserve their shape.
  6. Divide the batter evenly between the prepared pans.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  8. Allow the cakes to cool in the pans for 10 minutes, then turn out onto wire racks to cool completely.
  9. Beat the softened butter until smooth; gradually add powdered sugar and mix until fluffy. Stir in the strawberry puree.
  10. Spread icing between layers and on top of the cooled cake, and decorate with additional fresh strawberries.
