Ingredients

  • 1 1/2 cups sugar
  • 1/2 cup unsalted butter, softened
  • 1 cup milk
  • 3 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon vanilla extract

  • 1 cup ripe bananas, mashed
  • 1/4 cup powdered sugar
  • 1 teaspoon banana extract (optional)
  • 1/4 cup chocolate shavings (for decoration)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease three 8-inch round cake pans.
  2. Cream together the softened butter and sugar until light and fluffy, about 2-3 minutes.
  3. Beat in the eggs one at a time, mixing well after each addition, and stir in the vanilla extract.
  4. Combine the flour and baking powder in a separate bowl, then gradually add this to the creamed mixture, alternating with milk.
  5. Divide the batter evenly among the prepared pans and bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  6. Let the cakes cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
  7. Whip the heavy cream with powdered sugar and optional banana extract until soft peaks form, then gently fold in the mashed bananas.
  8. Spread the banana cream between each layer of cooled cake generously.
  9. Frost the top and sides of the cake with the remaining whipped cream.
  10. Decorate with chocolate shavings and other banana slices if desired.
  11. Chill the cake in the refrigerator for at least an hour before serving.
