- 1 can (15 oz) pinto beans, drained and rinsed
- 3 large eggs
- 1 teaspoon baking powder
Instructions
- Preheat the oven to 350°F (175°C).
- Line a small loaf pan with parchment paper or lightly grease the pan.
- Drain and rinse the pinto beans thoroughly. Allow excess water to drain away.
- Add the pinto beans, eggs, and baking powder to a blender or food processor.
- Blend until completely smooth and creamy, stopping to scrape down the sides as necessary.
- Pour the batter into the prepared loaf pan.
- Smooth the surface with a spatula.
- Bake for 30–35 minutes, or until the center is firm and a toothpick inserted into the middle comes out mostly clean.
- Remove the bread from the oven and allow it to cool in the pan for 10 minutes.
- Transfer the loaf to a wire rack and let it cool completely before slicing.
- Cut into approximately 8 slices and serve plain or toasted with your favorite savory toppings.
