- 1 lb boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (15 oz) ricotta cheese
- 2 cups lasagna noodles, broken into pieces
- 2 cups spinach, fresh or frozen
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 cup mozzarella cheese, shredded
- 1/2 cup Parmesan cheese, grated
Instructions
- In a large pot, heat olive oil over medium heat. Add diced onion and cook until translucent.
- Add minced garlic and cook for another minute.
- Add the chicken breasts and cook until browned on both sides.
- Pour in the chicken broth and bring to a boil.
- Add the broken lasagna noodles and Italian seasoning. Cook until noodles are tender.
- Stir in the ricotta cheese and spinach until well combined.
- Season with salt and pepper to taste.
- Top with mozzarella and Parmesan cheese, and let it melt before serving.
Notes
- For a creamier soup, add a splash of heavy cream.
- Feel free to add other vegetables like mushrooms or bell peppers.
