- 2 cups cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chilies
- 1 cup chicken broth
- 1 cup cream cheese, softened
- 1 teaspoon cumin
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup corn (optional)
- Fresh cilantro for garnish
Instructions
- In a large pot, combine the chicken, white beans, green chilies, and chicken broth.
- Bring the mixture to a simmer over medium heat.
- Add the cream cheese, cumin, garlic powder, onion powder, salt, and pepper.
- Stir until the cream cheese is fully melted and incorporated.
- If using, add the corn and heat through.
- Serve hot, garnished with fresh cilantro.
Notes
- For a spicier version, add jalapeños or cayenne pepper.
- This chili can be made ahead of time and stored in the refrigerator for up to 3 days.
