Description
Vegan Spanakopita is a delicious and healthy twist on the traditional Greek pastry, filled with spinach and herbs, wrapped in flaky phyllo dough.
Ingredients

- 1 package of phyllo dough
- 2 cups fresh spinach, chopped
- 1 cup green onions, chopped
- 1 cup fresh dill, chopped
- 1 cup tofu, crumbled
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C).
- In a large bowl, combine the chopped spinach, green onions, dill, crumbled tofu, olive oil, salt, and pepper.
- Lay out one sheet of phyllo dough on a clean surface and brush lightly with olive oil.
- Place another sheet of phyllo on top and brush with olive oil again.
- Cut the phyllo into strips about 3 inches wide.
- Place a spoonful of the spinach mixture at one end of each strip and fold the phyllo over to form a triangle.
- Continue folding the triangle along the strip until you reach the end. Seal the edges with a bit of olive oil.
- Place the filled triangles on a baking sheet lined with parchment paper.
- Bake for 25-30 minutes or until golden brown.
- Serve warm and enjoy!
Notes
- Make sure to keep the phyllo dough covered with a damp cloth while working to prevent it from drying out.
- Feel free to add other vegetables or spices to the filling for extra flavor.
- These can be made ahead of time and frozen before baking.
