- 4 large russet potatoes
- 1 cup sour cream
- 1/2 cup milk
- 1/2 cup butter, melted
- 1 cup shredded cheddar cheese
- 1/2 cup green onions, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and pierce the potatoes with a fork, then bake them for about 1 hour or until tender.
- Let the potatoes cool slightly, then scoop out the insides into a large bowl.
- Add sour cream, milk, melted butter, half of the cheddar cheese, green onions, salt, and pepper to the bowl and mix until smooth.
- Transfer the mixture into a greased baking dish and top with the remaining cheddar cheese.
- Bake in the oven for an additional 20-25 minutes or until the cheese is bubbly and golden.
Notes
- For a healthier version, you can substitute Greek yogurt for sour cream.
