Ingredients

- 1/4 cup lemon juice

- 1/2 cup chopped fresh parsley
- 1/2 cup diced red onion
- 1/2 cup diced cucumber
- 1/4 cup chopped fresh dill
- 1/4 cup pitted black olives, sliced
Instructions
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly before peeling and dicing.
- In a large bowl, whisk together olive oil, lemon juice, salt, and black pepper.
- Add the diced potatoes, parsley, red onion, cucumber, dill, and olives to the bowl.
- Toss gently to combine all ingredients.
- Chill in the refrigerator for at least 30 minutes before serving.
