- 1/2 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1/2 cup milk
- 1 teaspoon vanilla extract
- 1/2 cup brewed espresso, cooled
- 1 cup mascarpone cheese
- 1/4 cup powdered sugar
- Cocoa powder for dusting
Instructions
- Preheat the oven to 350°F (175°C) and line a cupcake pan with liners.
- In a mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the milk and vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, and baking powder.
- Gradually add the dry ingredients to the wet mixture, mixing until just combined.
- Fill the cupcake liners about 2/3 full with the batter.
- Bake for 18-20 minutes or until a toothpick inserted in the center comes out clean.
- Let the cupcakes cool completely.
- In a bowl, mix the mascarpone cheese and powdered sugar until smooth.
- Once the cupcakes are cool, poke holes in the tops and drizzle with cooled espresso.
- Top each cupcake with a dollop of the mascarpone mixture and dust with cocoa powder.
Notes
- For a stronger coffee flavor, use strong brewed coffee instead of espresso.
- These cupcakes can be made a day in advance and stored in the refrigerator.
- Garnish with chocolate shavings for an extra touch.
