  • 1 onion, diced
  • 3 cloves garlic, minced

  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups vegetable broth
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli)
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • Fresh cilantro for garnish

Instructions

  1. Heat coconut oil in a large pot over medium heat.
  2. Add diced onion and sauté until translucent.
  3. Stir in minced garlic and grated ginger, cooking for another minute.
  4. Add red curry paste and cook for 2 minutes, stirring frequently.
  5. Pour in coconut milk and vegetable broth, bringing the mixture to a simmer.
  6. Add mixed vegetables and cook until tender, about 10 minutes.
  7. Stir in soy sauce and lime juice.
  8. Serve hot, garnished with fresh cilantro.

Notes

  • Adjust the spice level by adding more or less curry paste.
