- 1 onion, diced
- 3 cloves garlic, minced
- 1 tablespoon ginger, grated
- 2 tablespoons red curry paste
- 1 can (14 oz) coconut milk
- 4 cups vegetable broth
- 2 cups mixed vegetables (bell peppers, carrots, broccoli)
- 1 tablespoon soy sauce
- 1 tablespoon lime juice
- Fresh cilantro for garnish
Instructions
- Heat coconut oil in a large pot over medium heat.
- Add diced onion and sauté until translucent.
- Stir in minced garlic and grated ginger, cooking for another minute.
- Add red curry paste and cook for 2 minutes, stirring frequently.
- Pour in coconut milk and vegetable broth, bringing the mixture to a simmer.
- Add mixed vegetables and cook until tender, about 10 minutes.
- Stir in soy sauce and lime juice.
- Serve hot, garnished with fresh cilantro.
Notes
- Adjust the spice level by adding more or less curry paste.
- For a protein boost, add tofu or chicken.
