Ingredients

  • 1 pound ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup chopped cilantro
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 can (14 oz) coconut milk
  • 2 tablespoons red curry paste
  • 1 tablespoon lime juice
  • 1 tablespoon fish sauce
  • Jasmine rice or noodles, for serving

Instructions

  1. Combine the ground chicken, breadcrumbs, chopped cilantro, egg, minced garlic, grated ginger, salt, and black pepper in a mixing bowl. Mix thoroughly and form into 1-inch meatballs.
  2. Brown the meatballs in a skillet with oil over medium heat for about 3–4 minutes on each side until golden brown.
  3. Simmer the coconut milk, red curry paste, lime juice, and fish sauce in the same skillet, stirring well.
  4. Cook the browned meatballs in the simmering sauce for 10–15 minutes until cooked through.
  5. Serve the meatballs over jasmine rice or noodles, garnishing with cilantro and lime wedges.
