- 1 pound ground chicken
- 1/4 cup breadcrumbs
- 1/4 cup chopped cilantro
- 1 egg
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 can (14 oz) coconut milk
- 2 tablespoons red curry paste
- 1 tablespoon lime juice
- 1 tablespoon fish sauce
- Jasmine rice or noodles, for serving
Instructions
- Combine the ground chicken, breadcrumbs, chopped cilantro, egg, minced garlic, grated ginger, salt, and black pepper in a mixing bowl. Mix thoroughly and form into 1-inch meatballs.
- Brown the meatballs in a skillet with oil over medium heat for about 3–4 minutes on each side until golden brown.
- Simmer the coconut milk, red curry paste, lime juice, and fish sauce in the same skillet, stirring well.
- Cook the browned meatballs in the simmering sauce for 10–15 minutes until cooked through.
- Serve the meatballs over jasmine rice or noodles, garnishing with cilantro and lime wedges.
