- 1 lb ground beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (10 oz) diced tomatoes with green chilies
- 1 cup corn kernels (fresh or frozen)
- 1 packet taco seasoning
- 1 cup shredded cheddar cheese
- 1 cup tortilla chips, crushed
- 1/2 cup chopped onion
- 1/2 cup chopped bell pepper
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
- Add the chopped onion and bell pepper to the skillet and sauté until softened.
- Stir in the black beans, kidney beans, diced tomatoes, corn, and taco seasoning. Mix well.
- Transfer the mixture to a baking dish and top with crushed tortilla chips and shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add more vegetables like zucchini or spinach for extra nutrition.
- This casserole can be made ahead of time and stored in the refrigerator before baking.
- For a spicier version, add jalapeños or hot sauce to the mixture.
