  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 cup corn kernels (fresh or frozen)
  • 1 packet taco seasoning
  • 1 cup shredded cheddar cheese
  • 1 cup tortilla chips, crushed
  • 1/2 cup chopped onion
  • 1/2 cup chopped bell pepper

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat.
  3. Add the chopped onion and bell pepper to the skillet and sauté until softened.
  4. Stir in the black beans, kidney beans, diced tomatoes, corn, and taco seasoning. Mix well.
  5. Transfer the mixture to a baking dish and top with crushed tortilla chips and shredded cheddar cheese.
  6. Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
  7. Let it cool for a few minutes before serving.
