Ingredients

  • 2 medium red onions, thinly sliced
  • 1 cup rice vinegar
  • 1/2 cup water
  • 1/4 cup granulated sugar
  • 1 tablespoon salt
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon freshly grated ginger
  • 1 clove garlic, minced
  • 1/2 teaspoon red pepper flakes (optional)
  • 1 tablespoon toasted sesame seeds
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Start by peeling the red onions and slicing them thinly into rings or half-moons.
  2. In the medium saucepan, combine the rice vinegar, water, granulated sugar, and salt. Heat over medium heat.
  3. Remove the saucepan from heat and stir in the soy sauce, sesame oil, grated ginger, and minced garlic.
  4. Place the sliced onions into your clean, heatproof jar. Pour the warm vinegar mixture over the onions.
  5. Allow the mixture to cool to room temperature, then cover and refrigerate for at least 2 hours.
  6. Just before serving, sprinkle with toasted sesame seeds and chopped fresh cilantro.
