- 2 medium red onions, thinly sliced
- 1 cup rice vinegar
- 1/2 cup water
- 1/4 cup granulated sugar
- 1 tablespoon salt
- 1 teaspoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon freshly grated ginger
- 1 clove garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon toasted sesame seeds
- 2 tablespoons chopped fresh cilantro
Instructions
- Start by peeling the red onions and slicing them thinly into rings or half-moons.
- In the medium saucepan, combine the rice vinegar, water, granulated sugar, and salt. Heat over medium heat.
- Remove the saucepan from heat and stir in the soy sauce, sesame oil, grated ginger, and minced garlic.
- Place the sliced onions into your clean, heatproof jar. Pour the warm vinegar mixture over the onions.
- Allow the mixture to cool to room temperature, then cover and refrigerate for at least 2 hours.
- Just before serving, sprinkle with toasted sesame seeds and chopped fresh cilantro.
