A vibrant and flavorful Taco Rice Bowl filled with ground meat, beans, fresh vegetables, and topped with cheese and sour cream.

Ingredients

Scale
  • 1 pound ground beef or turkey
  • 1 cup cooked rice
  • 1 taco seasoning packet
  • 1 can black beans, drained and rinsed
  • 1 cup corn, frozen or canned
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1 cup shredded cheese
  • Sour cream (optional)
  • Salsa (optional)

Instructions

  1. Brown the meat: In a large skillet, heat a drizzle of olive oil over medium heat. Add the ground meat and cook, breaking it apart with a wooden spoon, until fully browned. Drain any excess fat.
  2. Season it up: Sprinkle in the taco seasoning along with a splash of water. Stir and let it simmer until fragrant.
  3. Layer the goodness: In serving bowls, start with a layer of cooked rice, topped with seasoned meat, black beans, sweet corn, and diced tomatoes.
  4. Add freshness: Pile on the crisp lettuce and sprinkle with shredded cheese.
  5. Finishing touches: Add sour cream and salsa if desired.
  6. Serve immediately and enjoy your Taco Rice Bowl hot.

Notes

For added flavor, consider using fresh jalapeños or avocado. Leftovers can be stored individually in airtight containers for up to three days.
