Ingredients

- 4 ripe peaches
- 1 cup apple cider vinegar
- 1 cup sugar
- 1 teaspoon red pepper flakes
- 1 teaspoon cinnamon
- 1/2 teaspoon allspice
- 1/2 teaspoon cloves
- 1/2 teaspoon salt
Instructions
- Wash and slice the peaches, removing the pits.
- In a saucepan, combine apple cider vinegar, sugar, red pepper flakes, cinnamon, allspice, cloves, and salt.
- Bring the mixture to a boil, stirring until the sugar dissolves.
- Add the sliced peaches to the saucepan and simmer for 5 minutes.
- Remove from heat and let cool slightly.
- Transfer the peaches and pickling liquid to sterilized jars.
- Seal the jars and refrigerate for at least 24 hours before serving.
Notes
- For a spicier version, increase the amount of red pepper flakes.
- These pickled peaches can be stored in the refrigerator for up to 2 weeks.
- Great as a topping for salads or served with cheese.
