Ingredients

  • 4 ripe peaches
  • 1 cup apple cider vinegar
  • 1 cup sugar
  • 1 teaspoon red pepper flakes
  • 1 teaspoon cinnamon
  • 1/2 teaspoon allspice
  • 1/2 teaspoon cloves
  • 1/2 teaspoon salt

Instructions

  1. Wash and slice the peaches, removing the pits.
  2. In a saucepan, combine apple cider vinegar, sugar, red pepper flakes, cinnamon, allspice, cloves, and salt.
  3. Bring the mixture to a boil, stirring until the sugar dissolves.
  4. Add the sliced peaches to the saucepan and simmer for 5 minutes.
  5. Remove from heat and let cool slightly.
  6. Transfer the peaches and pickling liquid to sterilized jars.
  7. Seal the jars and refrigerate for at least 24 hours before serving.

Notes

  • For a spicier version, increase the amount of red pepper flakes.
  • These pickled peaches can be stored in the refrigerator for up to 2 weeks.
