- 1 lb chicken breast, cubed
- 1 cup bell peppers, chopped
- 1 cup pineapple chunks
- 1/2 cup onion, chopped
- 1/2 cup sugar
- 1/2 cup vinegar
- 1/4 cup soy sauce
- 2 tbsp cornstarch
- 2 tbsp vegetable oil
- Salt and pepper to taste
Instructions
- In a bowl, mix sugar, vinegar, soy sauce, and cornstarch to create the sauce.
- Heat vegetable oil in a pan over medium heat.
- Add chicken and cook until browned.
- Add onion and bell peppers, cooking until softened.
- Stir in pineapple chunks and the sauce mixture.
- Cook until the sauce thickens and everything is heated through.
- Serve hot over rice or noodles.
Notes
- For a spicier version, add red pepper flakes.
- Can substitute chicken with tofu for a vegetarian option.
- Leftovers can be stored in the refrigerator for up to 3 days.
