  • 1/4 teaspoon salt
  • 1/2 cup chopped nuts (optional)
  • 1/2 cup milk (or dairy-free alternative)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large pot, boil the sweet potatoes until tender, about 15 minutes. Drain and mash.
  3. In a mixing bowl, combine the mashed sweet potatoes, cottage cheese, oats, honey or maple syrup, cinnamon, nutmeg, and salt.
  4. If using, fold in the chopped nuts.
  5. Pour the mixture into a greased baking dish.
  6. Pour the milk over the top of the mixture.
