- 2 cups sweet potatoes, peeled and cubed
- 1 cup cottage cheese
- 1/2 cup rolled oats
- 1/4 cup honey or maple syrup
- 1 teaspoon cinnamon
- 1/2 teaspoon nutmeg
- 1/4 teaspoon salt
- 1/2 cup chopped nuts (optional)
- 1/2 cup milk (or dairy-free alternative)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large pot, boil the sweet potatoes until tender, about 15 minutes. Drain and mash.
- In a mixing bowl, combine the mashed sweet potatoes, cottage cheese, oats, honey or maple syrup, cinnamon, nutmeg, and salt.
- If using, fold in the chopped nuts.
- Pour the mixture into a greased baking dish.
- Pour the milk over the top of the mixture.
- Bake for 30-35 minutes or until the top is golden brown.
- Let cool for a few minutes before serving.
Notes
- Can be served warm or cold.
- Great for meal prep; can be stored in the refrigerator for up to 5 days.
- Feel free to add fruits like blueberries or bananas for extra flavor.
