  • 8 oz brie cheese
  • 1 cup fresh cranberries
  • 1/2 cup pecans, chopped
  • 2 tablespoons maple syrup
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube the sweet potatoes, then toss them with olive oil, salt, and pepper.
  3. Spread the sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a small saucepan, combine cranberries and maple syrup over medium heat until the cranberries burst and create a sauce.
  5. Once the sweet potatoes are done, remove them from the oven and top with brie cheese, cranberry sauce, and chopped pecans.
  6. Return to the oven for an additional 5-10 minutes until the brie is melted.
  7. Serve warm and enjoy!
