Ingredients

  • 1 cup sweet potatoes, cooked and mashed
  • 1 cup blueberries, fresh or frozen
  • 2 cups oats, ground into flour
  • 1/2 teaspoon cinnamon
  • 1 egg (optional, for binding)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the mashed sweet potatoes, blueberries, oats ground into flour, and cinnamon. Stir until well mixed.
  3. Add the egg (if using) and mix thoroughly.
  4. Shape small portions into balls or fun shapes.
  5. Line your baking sheet with parchment paper and arrange the treats on it.
  6. Bake for 25-30 minutes until firm and lightly golden.
  7. Allow treats to cool completely on a wire rack.

Notes

You can prepare the dough ahead of time and keep it in the fridge for 24 hours. These treats can also be made in an air fryer for quicker results.
