Ingredients

- 2 cups sweet corn kernels
- 1 cup burrata cheese
- 1/4 cup fresh basil, chopped
- 1 package of fresh ravioli dough
- Salt and pepper to taste
- Olive oil for drizzling
Instructions
- In a bowl, combine sweet corn, burrata cheese, and chopped basil. Season with salt and pepper.
- Roll out the ravioli dough and cut into squares.
- Place a spoonful of the corn mixture in the center of each square.
- Fold the dough over and seal the edges to form ravioli.
- Bring a pot of salted water to a boil and cook the ravioli for 3-4 minutes until they float.
- Drain and serve with a drizzle of olive oil and additional basil if desired.
Notes
- For a richer flavor, add grated Parmesan cheese to the filling.
- Serve with a light tomato sauce or simply with olive oil.
- Fresh ravioli can be made ahead of time and stored in the refrigerator.
