Ingredients

  • 2 cups sweet corn kernels
  • 1 cup burrata cheese
  • 1/4 cup fresh basil, chopped
  • 1 package of fresh ravioli dough
  • Salt and pepper to taste
  • Olive oil for drizzling

Instructions

  1. In a bowl, combine sweet corn, burrata cheese, and chopped basil. Season with salt and pepper.
  2. Roll out the ravioli dough and cut into squares.
  3. Place a spoonful of the corn mixture in the center of each square.
  4. Fold the dough over and seal the edges to form ravioli.
  5. Bring a pot of salted water to a boil and cook the ravioli for 3-4 minutes until they float.
  6. Drain and serve with a drizzle of olive oil and additional basil if desired.

Notes

  • For a richer flavor, add grated Parmesan cheese to the filling.
  • Serve with a light tomato sauce or simply with olive oil.
  • Fresh ravioli can be made ahead of time and stored in the refrigerator.
