Description
A refreshing and tangy side dish made with cucumber ribbons pickled in a sweet chili sauce.
Ingredients

- 2 large cucumbers
- 1/2 cup rice vinegar
- 1/4 cup sugar
- 1/4 cup water
- 2 tablespoons sweet chili sauce
- 1 teaspoon salt
- 1 teaspoon sesame oil
- 1 tablespoon sesame seeds (optional)
Instructions
- Wash and peel the cucumbers, then slice them into thin ribbons using a vegetable peeler or mandoline.
- In a bowl, combine rice vinegar, sugar, water, sweet chili sauce, salt, and sesame oil. Stir until the sugar is dissolved.
- Add the cucumber ribbons to the bowl and toss to coat them in the pickling liquid.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
- Before serving, sprinkle with sesame seeds if desired.
Notes
- For a spicier version, add sliced red chili peppers to the pickling mixture.
- These pickled cucumbers can be stored in the refrigerator for up to a week.
- Great as a side dish or topping for sandwiches and salads.
