Sweet Chili Pickled Cucumber Ribbons You’ll Love!

Ingredients

  • 2 large cucumbers
  • 1/2 cup rice vinegar
  • 1/4 cup sugar
  • 1/4 cup water
  • 2 tablespoons sweet chili sauce
  • 1 teaspoon salt
  • 1 teaspoon sesame oil
  • 1 tablespoon sesame seeds (optional)

Instructions

  1. Wash and peel the cucumbers, then slice them into thin ribbons using a vegetable peeler or mandoline.
  2. In a bowl, combine rice vinegar, sugar, water, sweet chili sauce, salt, and sesame oil. Stir until the sugar is dissolved.
  3. Add the cucumber ribbons to the bowl and toss to coat them in the pickling liquid.
  4. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Before serving, sprinkle with sesame seeds if desired.

Notes

  • For a spicier version, add sliced red chili peppers to the pickling mixture.
  • These pickled cucumbers can be stored in the refrigerator for up to a week.
