Ingredients

- 2 tablespoons olive oil
- 1 small onion, diced
- 4 cloves garlic, minced
- 2 teaspoons smoked paprika
- ¼ teaspoon crushed red pepper flakes
- 5 cups (4 pints) cherry tomatoes
- ½ cup water
- ¼ cup apple cider vinegar
- ¼ cup dark brown sugar
- 2 sprigs fresh thyme
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Heat the olive oil in a large soup pot or Dutch oven over medium heat.
- Sauté the diced onion, stirring occasionally for about five minutes until softened and translucent.
- Add the minced garlic, smoked paprika, and crushed red pepper flakes. Stir for about 30 seconds until fragrant.
- Combine the cherry tomatoes, water, apple cider vinegar, brown sugar, thyme sprigs, salt, and pepper. Stir and bring to a boil over high heat.
- Reduce the heat to low and let simmer for about 25-30 minutes, stirring occasionally until thickened.
- Remove the thyme sprigs and allow the jam to cool before transferring to airtight jars.
Notes
The jam tastes better after a day in the fridge as the flavors meld beautifully.
