Description

A delightful blend of sweet and spicy flavors, this cherry tomato jam is perfect for spreading on crusty bread or livening up any dish.


Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons smoked paprika
  • ¼ teaspoon crushed red pepper flakes
  • 5 cups (4 pints) cherry tomatoes
  • ½ cup water
  • ¼ cup apple cider vinegar
  • ¼ cup dark brown sugar
  • 2 sprigs fresh thyme
  • 2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper

Instructions

  1. Heat the olive oil in a large soup pot or Dutch oven over medium heat.
  2. Sauté the diced onion, stirring occasionally for about five minutes until softened and translucent.
  3. Add the minced garlic, smoked paprika, and crushed red pepper flakes. Stir for about 30 seconds until fragrant.
  4. Combine the cherry tomatoes, water, apple cider vinegar, brown sugar, thyme sprigs, salt, and pepper. Stir and bring to a boil over high heat.
  5. Reduce the heat to low and let simmer for about 25-30 minutes, stirring occasionally until thickened.
  6. Remove the thyme sprigs and allow the jam to cool before transferring to airtight jars.

Notes

The jam tastes better after a day in the fridge as the flavors meld beautifully.
