- 4 medium zucchinis
- 1 cup cooked quinoa
- 1 cup diced tomatoes

Instructions
- Preheat the oven to 375°F (190°C).
- Cut the zucchinis in half lengthwise and scoop out the insides to create boats.
- In a skillet, sauté the onion and garlic until translucent.
- Add the diced tomatoes, cooked quinoa, Italian seasoning, salt, and pepper to the skillet and mix well.
- Fill each zucchini boat with the quinoa mixture and top with shredded cheese.
- Place the stuffed zucchinis on a baking sheet and bake for 25-30 minutes until the zucchinis are tender and the cheese is melted.
