Ingredients

  • 1 cup fresh strawberries, finely chopped
  • 2 cups oat flour
  • 1/4 cup unsweetened applesauce
  • 1 tablespoon coconut oil (optional)
  • 1 tablespoon chia seeds or ground flaxseed (optional)

Instructions

  1. Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper.
  2. In a small bowl, mash the strawberries until they form a chunky puree.
  3. In a large mixing bowl, combine the strawberry puree, oat flour, applesauce, and coconut oil. Mix until blended into a cohesive dough.
  4. Sprinkle a flat surface with oat flour and roll out the dough to about 1/4 inch thickness.
  5. Use cookie cutters to cut out shapes and place on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the edges turn golden brown.
  7. Transfer the treats to a wire rack to cool completely before serving.
