- 2 pounds of potatoes
- 1 cup of mayonnaise
- 1 tablespoon of Dijon mustard
- 1/2 cup of sour cream
- 1/4 cup of chopped green onions
- 1/4 cup of chopped celery
- 1/4 cup of crispy bacon bits
- Salt and pepper to taste
Instructions
- Wash and peel the potatoes, then cut them into bite-sized pieces.
- Boil the potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and let them cool completely.
- In a large bowl, mix together the mayonnaise, Dijon mustard, sour cream, salt, and pepper.
- Add the cooled potatoes, green onions, celery, and bacon bits to the bowl and gently mix until well combined.
- Chill the potato salad in the refrigerator for at least 1 hour before serving.
