Ingredients

  • 4 chicken thighs
  • 1 cup plain yogurt
  • 2 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 2 teaspoons paprika
  • 1 teaspoon cayenne pepper
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup feta cheese, crumbled
  • 1/4 cup fresh dill, chopped
  • 1 pound baby potatoes
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. In a bowl, mix yogurt, olive oil, lemon juice, paprika, cayenne pepper, garlic powder, salt, and pepper.
  2. Add chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, preferably overnight.
  3. Preheat the oven to 400°F (200°C).
  4. Wash and halve the baby potatoes, then toss them with olive oil, salt, and pepper.
  5. Spread the potatoes on a baking sheet and roast for 25-30 minutes until crispy and golden.
  6. While the potatoes are roasting, grill or bake the marinated chicken until cooked through, about 20-25 minutes.
  7. In a separate bowl, mix feta cheese, dill, and a splash of olive oil to create the dill feta cream.
  8. Once the chicken and potatoes are done, serve the chicken topped with dill feta cream and crispy baby potatoes on the side.
  9. Garnish with fresh parsley before serving.

Notes

  • For extra spice, add more cayenne pepper to the marinade.
  • Letting the chicken marinate overnight enhances the flavor.
  • Feel free to substitute chicken thighs with chicken breasts if preferred.
