- 1 cup all-purpose flour
- 1/4 cup sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/4 cup vegetable oil
- 2 large eggs
- 1/2 cup chopped jalapeños
- 1/4 cup honey
- 1 lime (zested and juiced)
- 1 tablespoon butter (for greasing the pan)
Instructions
- Preheat your oven to 400°F (200°C) and grease an 8-inch square baking dish with butter.

- Fold in the chopped jalapeños and distribute evenly through the batter.
- Pour the batter into the prepared baking dish and smooth the top.
- Bake for 20-25 minutes, or until a toothpick inserted in the center comes out clean.
- While the cornbread bakes, prepare the lime drizzle by combining additional lime juice, zest, and powdered sugar.
- Drizzle the lime mixture over the warm cornbread and serve immediately.
Notes
Feel free to adjust the spice level by varying the amount of jalapeños. For a richer flavor, consider adding shredded cheese or corn kernels.
