A delicious and spicy twist on classic chicken melts, featuring Sriracha sauce and gooey cheese.

- 2 cups cooked chicken, shredded
- 1/2 cup Sriracha sauce
- 1 cup shredded cheese (cheddar or mozzarella)
- 4 slices of bread
- 2 tablespoons butter
- 1/4 cup green onions, chopped
Instructions
- Preheat your grill or skillet over medium heat.
- In a bowl, mix the shredded chicken with Sriracha sauce until well combined.
- Spread butter on one side of each slice of bread.
- On the unbuttered side, layer the chicken mixture, cheese, and green onions.
- Top with another slice of bread, buttered side up.
- Grill the sandwiches for 3-4 minutes on each side, or until golden brown and the cheese is melted.
- Remove from heat, slice, and serve hot.
Notes
- Adjust the amount of Sriracha to your spice preference.
- For a milder version, use less Sriracha or mix it with mayonnaise.
- These melts can be made with any leftover chicken.
