			- 1 lb spicy sausage
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups chicken broth
- 2 cups kale, chopped
- 1 can diced tomatoes (14.5 oz)
- 1 tsp red pepper flakes
- Salt and pepper to taste
- 2 tbsp olive oil
Instructions
- In a large pot, heat olive oil over medium heat.
- Add the chopped onion and garlic, sauté until translucent.
- Add the spicy sausage, breaking it up with a spoon, and cook until browned.
- Stir in the diced tomatoes, chicken broth, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer for 15 minutes.
- Add the chopped kale and cook for an additional 5 minutes until wilted.
- Season with salt and pepper to taste before serving.
Notes
- For a milder soup, use mild sausage instead of spicy.
- Feel free to add other vegetables like carrots or potatoes for extra nutrition.
