Ingredients

  • 4 cups watermelon rind, peeled and cut into strips
  • 1 cup white vinegar
  • 1 cup water
  • 1 cup sugar
  • 2 tablespoons salt
  • 1 tablespoon red pepper flakes
  • 1 teaspoon mustard seeds
  • 1 teaspoon black peppercorns
  • 1 teaspoon garlic powder

Instructions

  1. Prepare the watermelon rind by removing the green skin and cutting it into strips.
  2. In a pot, combine vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar dissolves.
  3. Add red pepper flakes, mustard seeds, black peppercorns, and garlic powder to the pot.
  4. Place the watermelon rind strips in sterilized jars.
  5. Pour the hot pickling liquid over the watermelon rind, ensuring they are fully submerged.
  6. Seal the jars and let them cool to room temperature.
  7. Refrigerate for at least 24 hours before serving to allow flavors to develop.
