- 4 cups watermelon rind, peeled and cut into strips
- 1 cup white vinegar
- 1 cup water
- 1 cup sugar
- 2 tablespoons salt
- 1 tablespoon red pepper flakes
- 1 teaspoon mustard seeds
- 1 teaspoon black peppercorns
- 1 teaspoon garlic powder
Instructions
- Prepare the watermelon rind by removing the green skin and cutting it into strips.
- In a pot, combine vinegar, water, sugar, and salt. Bring to a boil, stirring until sugar dissolves.
- Add red pepper flakes, mustard seeds, black peppercorns, and garlic powder to the pot.
- Place the watermelon rind strips in sterilized jars.
- Pour the hot pickling liquid over the watermelon rind, ensuring they are fully submerged.
- Seal the jars and let them cool to room temperature.
- Refrigerate for at least 24 hours before serving to allow flavors to develop.
Notes
- For extra heat, increase the amount of red pepper flakes.
- These pickles can last up to a month in the refrigerator.
- Serve as a side dish or a unique topping for sandwiches.
