Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/4 cup pure maple syrup
  • 2 tbsp Sriracha sauce (adjust to taste)
  • 1 can (13.5 oz) full-fat coconut milk
  • 1 cup jasmine rice
  • 1 tbsp fresh ginger, grated
  • 4 garlic cloves, minced
  • 3 green onions, sliced (for garnish)
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper, to taste

Instructions

  1. Marinate the chicken: In a large mixing bowl, combine maple syrup, Sriracha sauce, minced garlic, grated ginger, soy sauce, salt, and pepper. Add the chicken breasts, ensuring each piece is coated thoroughly. Cover and marinate for at least 30 minutes.
  2. Cook the rice: Rinse the jasmine rice under cold water until the water runs clear. In a medium saucepan over medium heat, combine the rinsed rice, coconut milk, and an equal amount of water (around 1 cup). Bring to a boil, then lower the heat to simmer, covering the pot. Cook for about 15-20 minutes until absorbed.
  3. Sear the chicken: In a large skillet over medium-high heat, add oil. Once hot, place the marinated chicken in the skillet, searing each side for about 6-7 minutes until golden brown and cooked through.
  4. Add sauce: Carefully pour the reserved marinade from the bowl into the skillet with the chicken. Allow the mixture to simmer on low for about 5-7 minutes.
  5. Fluff the rice: Once the rice absorbs all the liquid, fluff it with a fork.
  6. Garnish: Plate the chicken atop the coconut rice, and sprinkle with sliced green onions and lime wedges.

Notes

Marinate chicken ahead of time for better flavor. Rinse rice until clear to avoid clumpiness.
