Instructions

  1. In a saucepan, combine the diced mangoes, onion, garlic, and green chilies.
  2. Add brown sugar, vinegar, ginger, mustard seeds, turmeric powder, and salt.
  3. Cook over medium heat, stirring occasionally, until the mixture thickens (about 20-30 minutes).
  4. Let it cool before transferring to a jar.
  5. Store in the refrigerator for up to 2 weeks.
