Ingredients

  • 2 chicken breasts
  • 2 tablespoons harissa paste
  • 1 cup couscous
  • 2 cups chicken broth
  • 1 tablespoon olive oil
  • 1 red bell pepper, diced
  • 1 cucumber, diced
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix the harissa paste with olive oil and coat the chicken breasts.
  3. Place the chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
  4. While the chicken is baking, bring the chicken broth to a boil in a saucepan.
  5. Add the couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
  6. Fluff the couscous with a fork and season with salt and pepper.
  7. Once the chicken is done, slice it and serve it over the couscous.
  8. Top with diced bell pepper, cucumber, and fresh parsley.
