- 2 chicken breasts
- 2 tablespoons harissa paste
- 1 cup couscous
- 2 cups chicken broth
- 1 tablespoon olive oil
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix the harissa paste with olive oil and coat the chicken breasts.
- Place the chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
- While the chicken is baking, bring the chicken broth to a boil in a saucepan.
- Add the couscous to the boiling broth, cover, and remove from heat. Let it sit for 5 minutes.
- Fluff the couscous with a fork and season with salt and pepper.
- Once the chicken is done, slice it and serve it over the couscous.
- Top with diced bell pepper, cucumber, and fresh parsley.
Notes
- Adjust the amount of harissa paste to your spice preference.
- This dish can be served warm or cold.
- Leftovers can be stored in the refrigerator for up to 3 days.
