- 2 cups cooked chicken, shredded
- 1 tablespoon olive oil
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 can (14.5 oz) diced tomatoes
- 4 cups chicken broth
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn, frozen or canned
- 2 teaspoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon cayenne pepper (adjust to taste)
- Salt and pepper to taste
- 1 cup tortilla strips
- 1 avocado, diced
- 1/2 cup cilantro, chopped
- 1 lime, cut into wedges
Instructions
- In a large pot, heat olive oil over medium heat.
- Add diced onion and bell pepper, sauté until softened.
- Stir in minced garlic and cook for an additional minute.
- Add shredded chicken, diced tomatoes, chicken broth, black beans, corn, chili powder, cumin, cayenne pepper, salt, and pepper.
- Bring the soup to a boil, then reduce heat and let it simmer for 20 minutes.
- Serve hot, topped with tortilla strips, diced avocado, cilantro, and lime wedges.
Notes
- Adjust the level of spiciness by modifying the amount of cayenne pepper.
- This soup can be made ahead of time and stored in the refrigerator for up to 3 days.
