  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 cup rice
  • 2 cups water
  • 1 bell pepper, diced
  • 1 cup corn, frozen or fresh
  • 1 avocado, sliced
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a bowl, toss the shrimp with Cajun seasoning until well coated.
  2. Heat olive oil in a skillet over medium heat and add the seasoned shrimp.
  3. Cook the shrimp for 2-3 minutes on each side until they are pink and cooked through.
  4. Meanwhile, cook the rice according to package instructions using water.
  5. In the last few minutes of cooking the rice, add the diced bell pepper and corn to the pot.
  6. Once the rice and vegetables are cooked, fluff with a fork and divide into bowls.
  7. Top the rice with the cooked shrimp, avocado slices, and garnish with fresh cilantro.
  8. Serve with lime wedges on the side.
