- 1 lb shrimp, peeled and deveined
- 2 tablespoons Cajun seasoning
- 2 tablespoons olive oil
- 1 cup rice
- 2 cups water
- 1 bell pepper, diced
- 1 cup corn, frozen or fresh
- 1 avocado, sliced
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a bowl, toss the shrimp with Cajun seasoning until well coated.
- Heat olive oil in a skillet over medium heat and add the seasoned shrimp.
- Cook the shrimp for 2-3 minutes on each side until they are pink and cooked through.
- Meanwhile, cook the rice according to package instructions using water.
- In the last few minutes of cooking the rice, add the diced bell pepper and corn to the pot.
- Once the rice and vegetables are cooked, fluff with a fork and divide into bowls.
- Top the rice with the cooked shrimp, avocado slices, and garnish with fresh cilantro.
- Serve with lime wedges on the side.

- Adjust the amount of Cajun seasoning to taste for desired spiciness.
