Ingredients

  • 4 cups cucumbers, sliced
  • 1 cup onions, thinly sliced
  • 1 cup apple cider vinegar
  • 1 cup sugar
  • 1 tablespoon mustard seeds
  • 1 tablespoon red pepper flakes
  • 1 teaspoon turmeric
  • 1 teaspoon salt

Instructions

  1. In a large bowl, combine the cucumbers and onions. Sprinkle with salt and let sit for 1 hour.
  2. In a saucepan, combine apple cider vinegar, sugar, mustard seeds, red pepper flakes, turmeric, and salt. Bring to a boil.
  3. Drain the cucumbers and onions, then add them to the boiling vinegar mixture.
  4. Remove from heat and let cool for 30 minutes.
  5. Transfer the mixture to sterilized jars and refrigerate for at least 24 hours before serving.

Notes

  • For extra heat, increase the amount of red pepper flakes.
  • These pickles can be stored in the refrigerator for up to 2 months.
  • Great as a topping for sandwiches or served alongside grilled meats.
