  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 cups ripe pears, peeled and diced
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9-inch round cake pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, spices, and salt.
  3. In another bowl, cream the butter and brown sugar until light and fluffy.
  4. Add the eggs one at a time, mixing well after each addition, then stir in the vanilla.
  5. Gradually add the dry ingredients to the wet mixture, mixing until just combined.
  6. Fold in the diced pears and walnuts, if using.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before transferring to a wire rack.
  10. For the glaze, melt 1/4 cup of butter in a saucepan, add 1 cup of brown sugar and 1/4 cup of milk, and bring to a boil. Cook for 2 minutes, then drizzle over the cooled cake.
