			- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground ginger
- Salt and pepper to taste
- Juice and zest of 1 orange
- 2 tablespoons maple syrup (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the cubed butternut squash with olive oil, cinnamon, nutmeg, ginger, salt, and pepper.
- Add the orange juice and zest, and mix well to coat the squash evenly.
- If using, drizzle maple syrup over the mixture and stir to combine.
- Spread the squash mixture in a single layer on a baking sheet.
- Roast in the preheated oven for 25-30 minutes, or until the squash is tender and caramelized, stirring halfway through.
- Remove from the oven and serve warm.
Notes
- For added flavor, consider adding a sprinkle of cayenne pepper for heat.
- This dish pairs well with roasted meats or as a side for a vegetarian meal.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
