Ingredients

  • 2 cups dried apricots
  • 1 cup sugar
  • 1 cup water
  • 2 jalapeños, finely chopped
  • 1 tablespoon lemon juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves

Instructions

  1. In a saucepan, combine dried apricots, sugar, and water. Bring to a boil over medium heat.
  2. Reduce heat and simmer for 10 minutes, stirring occasionally.
  3. Add chopped jalapeños, lemon juice, cinnamon, ginger, and cloves. Stir well.
  4. Continue to simmer for another 15-20 minutes until the mixture thickens.
  5. Remove from heat and let cool slightly before transferring to sterilized jars.
  6. Seal jars and let them cool completely before storing in the refrigerator.
