  • 0.75 lb boneless, skinless chicken breasts
  • ¼ cup lime juice
  • ½ tsp chili powder
  • 1 Tbsp chipotle pepper in adobo
  • 4 large tortillas
  • 1 cup uncooked rice
  • 1 small red bell pepper
  • 1 jalapeño
  • 1 cup black beans (drained and rinsed)
  • ¾ cup corn kernels
  • ¼ cup cotija cheese

Instructions

  1. Marinate the chicken: Dice chicken into bite-sized pieces, combine olive oil, lime juice, chili powder, and chipotle pepper in a mixing bowl. Add chicken and marinate for at least 15 minutes.
  2. Cook the rice according to package instructions.
  3. Sauté the marinated chicken in a non-stick skillet over medium heat for 12–15 minutes until fully cooked and golden brown.
  4. Sauté sliced red bell pepper, jalapeño, and corn with the cooked chicken for 4-5 minutes, adding minced garlic for the last minute.
  5. Warm the tortillas in a dry skillet for about 30 seconds on each side.
  6. Assemble the wraps by layering rice, chicken mixture, black beans, corn, and cotija cheese in a tortilla, drizzling with sauce.
  7. Roll the tortillas tightly and serve immediately.

Notes
