- ¼ cup lime juice
- ½ tsp chili powder
- 1 Tbsp chipotle pepper in adobo
- 4 large tortillas
- 1 cup uncooked rice
- 1 small red bell pepper
- 1 jalapeño
- 1 cup black beans (drained and rinsed)
- ¾ cup corn kernels
- ¼ cup cotija cheese
Instructions
- Marinate the chicken: Dice chicken into bite-sized pieces, combine olive oil, lime juice, chili powder, and chipotle pepper in a mixing bowl. Add chicken and marinate for at least 15 minutes.
- Cook the rice according to package instructions.
- Sauté the marinated chicken in a non-stick skillet over medium heat for 12–15 minutes until fully cooked and golden brown.
- Sauté sliced red bell pepper, jalapeño, and corn with the cooked chicken for 4-5 minutes, adding minced garlic for the last minute.
- Warm the tortillas in a dry skillet for about 30 seconds on each side.
- Assemble the wraps by layering rice, chicken mixture, black beans, corn, and cotija cheese in a tortilla, drizzling with sauce.
- Roll the tortillas tightly and serve immediately.
