A deliciously smoky and spicy meatloaf infused with jalapeños and topped with a creamy ranch drizzle.
Ingredients

- 1 lb ground beef
- 1/2 cup breadcrumbs
- 1/2 cup shredded cheddar cheese
- 1/4 cup diced jalapeños
- 1/4 cup diced onion
- 1/4 cup milk
- 1 egg
- 1 tsp garlic powder
- 1 tsp smoked paprika
- Salt and pepper to taste
- 1/2 cup ranch dressing
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine ground beef, breadcrumbs, cheddar cheese, jalapeños, onion, milk, egg, garlic powder, smoked paprika, salt, and pepper.
- Mix until well combined and shape into a loaf.
- Place the meatloaf in a baking dish and bake for 45-50 minutes.
- While the meatloaf is baking, prepare the creamy ranch drizzle by mixing ranch dressing with a little water to thin it out.
- Once the meatloaf is cooked through, remove it from the oven and let it rest for 10 minutes.
- Slice the meatloaf and drizzle with the creamy ranch before serving.
Notes
- For extra heat, leave some seeds in the jalapeños.
- Can substitute ground turkey for a leaner option.
- Serve with a side of vegetables or a salad for a complete meal.
