Ingredients

  • 34 lbs beef shoulder
  • 1 cup honey
  • 10 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon thyme
  • 1 teaspoon rosemary
  • 1 cup beef broth

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a bowl, mix honey, minced garlic, olive oil, salt, pepper, thyme, and rosemary.
  3. Rub the mixture all over the beef shoulder.
  4. Place the beef in a roasting pan and pour beef broth around it.
  5. Cover the pan with foil and roast for 3-4 hours, or until the meat is tender.
  6. Remove the foil and roast for an additional 30 minutes to caramelize the top.
  7. Let the beef rest for 15 minutes before slicing and serving.
