- 1 pound ground beef
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 2 cups uncooked pasta (elbow or rotini)
- 3 cups beef broth
- 1 cup shredded cheese (cheddar or Mexican blend)
- Optional toppings: sour cream, avocado, cilantro
Instructions
- In a skillet, brown the ground beef over medium heat until fully cooked. Drain excess fat.
- Transfer the cooked beef to the slow cooker.
- Add taco seasoning, black beans, corn, diced tomatoes, uncooked pasta, and beef broth to the slow cooker.
- Stir to combine all ingredients well.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours.
- About 15 minutes before serving, stir in the shredded cheese until melted.
- Serve hot with optional toppings as desired.
