- 4 cups frozen corn
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 2 cups diced potatoes
- 1 cup heavy cream
- 1 teaspoon thyme
- Salt and pepper to taste
Instructions
- In a slow cooker, combine the diced ham, frozen corn, chopped onion, minced garlic, chicken broth, and diced potatoes.
- Add thyme, salt, and pepper to the mixture.
- Cover and cook on low for 6-8 hours or high for 3-4 hours.
- About 30 minutes before serving, stir in the heavy cream.
- Adjust seasoning if necessary and serve hot.
Notes
- For a thicker chowder, mash some of the potatoes before adding the cream.
- Feel free to add other vegetables like carrots or celery for extra flavor.
- This chowder can be stored in the refrigerator for up to 3 days.
