Ingredients

- 3 pounds beef chuck roast
- 1 onion, sliced
- 4 cloves garlic, minced
- 1 cup beef broth
- 1 cup water
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon black pepper
- 8 hoagie rolls
- 8 slices provolone cheese
Instructions
- Place the beef chuck roast in the slow cooker.
- Add sliced onion and minced garlic on top of the roast.
- In a bowl, mix together beef broth, water, Worcestershire sauce, thyme, and black pepper; pour over the roast.
- Cover and cook on low for 8 hours or until the beef is tender.
- Remove the beef from the slow cooker and shred it with two forks.
- Return the shredded beef to the slow cooker and stir to combine with the juices.
- To serve, place a portion of the beef on a hoagie roll, top with provolone cheese, and serve with a side of au jus for dipping.
Notes
- For extra flavor, sear the beef roast in a skillet before placing it in the slow cooker.
- Feel free to add sliced bell peppers or mushrooms for additional toppings.
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
