Description

Delicious and tender slow-cooked beef served on crusty rolls, perfect for dipping in savory au jus.


Ingredients

  • 34 pounds beef chuck roast
  • 1 onion, sliced
  • 4 cloves garlic, minced
  • 1 cup beef broth
  • 1 cup water
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon black pepper
  • 8 hoagie rolls
  • Provolone cheese, optional

Instructions

  1. Place the sliced onion and minced garlic at the bottom of the slow cooker.
  2. Season the beef chuck roast with thyme, black pepper, and Worcestershire sauce, then place it on top of the onions and garlic.
  3. Pour the beef broth and water over the roast.
  4. Cover and cook on low for 8-10 hours or until the meat is tender.
  5. Once cooked, shred the beef with two forks and mix it with the juices.
  6. Serve the beef on hoagie rolls, topped with provolone cheese if desired, and dip in the au jus.

Notes

  • For extra flavor, add sliced bell peppers or mushrooms to the slow cooker.
  • Leftovers can be stored in the refrigerator for up to 3 days.
  • This recipe can be made ahead of time and reheated for serving.
