- 1 pound beef stew meat, cut into 1-inch pieces
- 1 cup barley
- 4 cups beef broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 cup onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
Instructions
- In a slow cooker, combine the beef stew meat, barley, beef broth, carrots, celery, onion, garlic, thyme, and rosemary.
- Season with salt and pepper to taste.
- Cover and cook on low for 8 hours or on high for 4 hours, until the beef is tender and the barley is cooked.
- Stir well before serving and adjust seasoning if necessary.

- For added flavor, you can sear the beef in a skillet before adding it to the slow cooker.
- This soup can be frozen for up to 3 months; just reheat before serving.
