Description

A delicious blend of creamy, buttery grits and perfectly seasoned shrimp, baked to golden perfection.


Ingredients

  • 1 cup grits
  • 4 cups water
  • 1 lb shrimp, peeled and deveined
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 1/2 cup cream
  • 1/2 cup onion, chopped
  • 1/2 cup bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 2 green onions, chopped (for garnish)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large pot, bring 4 cups of water to a rolling boil. Stir in 1 cup of grits, reduce the heat, and cook according to package instructions.
  3. In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté chopped onions, bell peppers, and minced garlic for about 5 minutes.
  4. Add the shrimp, paprika, salt, and pepper. Sauté until shrimp is pink and opaque, about 3-5 minutes.
  5. In a mixing bowl, combine cooked grits, shrimp mixture, cheddar cheese, milk, and cream. Stir gently.
  6. Pour the mixture into a greased casserole dish and smooth it out evenly.
  7. Bake for 25-30 minutes until the top is golden and bubbly.
  8. Garnish with chopped green onions before serving.

Notes

This casserole can be made ahead of time and refrigerated overnight. Consider adding hot sauce or cayenne for extra heat.
