Ingredients

- 1 cup grits
- 4 cups water
- 1 lb shrimp, peeled and deveined
- 1 cup shredded cheddar cheese
- 1 cup milk
- 1/2 cup cream
- 1/2 cup onion, chopped
- 1/2 cup bell pepper, chopped
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 green onions, chopped (for garnish)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large pot, bring 4 cups of water to a rolling boil. Stir in 1 cup of grits, reduce the heat, and cook according to package instructions.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Sauté chopped onions, bell peppers, and minced garlic for about 5 minutes.
- Add the shrimp, paprika, salt, and pepper. Sauté until shrimp is pink and opaque, about 3-5 minutes.
- In a mixing bowl, combine cooked grits, shrimp mixture, cheddar cheese, milk, and cream. Stir gently.
- Pour the mixture into a greased casserole dish and smooth it out evenly.
- Bake for 25-30 minutes until the top is golden and bubbly.
- Garnish with chopped green onions before serving.
Notes
This casserole can be made ahead of time and refrigerated overnight. Consider adding hot sauce or cayenne for extra heat.
